OC re-inspection - Food Catering - Sonoran Room This inspection was conducted with the facility manager. A pdf copy of this inspection report was emailed to Dan L. at the time of this inspection. No county legal action will result form this inspection. This facility is not currently in operation. The following items must be addressed prior to final permit approval; 1. Provide waterproof material such as FRP on the walls behind, around and underneath the mechanical dishwasher, three compartment sink and food prep sink where there is currently painted drywall. Use FRP adhesive. Do not use nails or screws. 2. Provide a separate, indirect drain pipe to a floor sink with a minimum 1 in. air-gap for the three compartment sink that currently has a direct connection. 3. Repair all leaking drain pipes at all sinks where necessary. 4. Provide new, 1022 backflow prevention devices for all coffee and tea machines connected to water supply lines. 5. A self-contained, portable hand sink with hot and cold water and with fresh and wastewater tanks is required for outdoor cooking operations. Also, separate plan submittal and approval are required from MCESD for outdoor cooking operations. 6. Waterproof material such as FRP must be installed behind and underneath the mop sink. 7. Provide waterproof material such as epoxy to the laminate beverage station countertops. 8. All new countertops must be solid surface material such as stainless steel or granite. Do not install laminate countertops.

e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
