OC Inspection - E&D Class 3 This inspection was conducted with the owner. A PDF copy of this inspection report was emailed to Lydia A. at the time of this inspection. This facility is currently under construction and is not open. No county legal action will result from this inspection. Address the following prior to final permit approval; 1. Provide hot water to the had sink in the employee restroom in the back room. 2. Repair the exhaust fan in the employee restroom in the back room. 3. Provide self-closers for all restroom doors. 4. Have the RPZ backflow prevention device for the RO system tested and certified. 5. Provide a dedicated hand sink in the ice machine room with hot and cold water. 6. Fill in all gaps and repair all damaged floors throughout the facility. All floors must be smooth, non-absorbent and easily cleanable. 7. Repair the damaged walls and provide FRP on the wall behind the RO system as discussed. 8. Repair all damaged walls in the ice machine room to be smooth, non-absorbent and easily cleanable. There must be no openings in the walls, bare wood or bare drywall. 9. Provide a cove base finish at all floor wall junctures throughout the facility including the floor/cabinet junctures in the service area. 10. Provide washable ceiling tiles above all water, ice, food storage and food service areas including, as discussed, in the room where the freezer will be placed. 11. Provide door sweeps to seal the space between the bottoms of the back double doors and the outside. 12. All countertops in food prep and service areas must be solid surface material such as stainless steel, Corion, granite, etc. 13. Provide shields or plastic tubes to cover the fluorescent lights in the ice machine and RO rooms. 14. Provide strainers and grates for all floor sinks throughout the facility. 15. Complete the remodel application process.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
