Inspection Comments

First walk trough of the construction site. Construction is at 70% completion. Please note the items below for follow up before the next inspection: (I know many items will be addressed anyway but just in case). 1). Noted some holes in the grout at the base under the hood, please fill in. Also grout missing at cleanouts. Tile work will be finished in the front of the house, please seal base tile at the underside to the cabinets. 2). Hood will be sealed at the underside wall junctures. 3). Stainless trim will be installed in the corner of the hood. 4). Wall will be finished out in front of the hood where not finished. 5). All cleanout covers will be provided and mounted. 6). Please provide an additional water feed at the mop sink for future chemical dispensers. 7). Please provide self closers for the restroom doors. 8). A coved floor / wall juncture is required in the restrooms, provide. 9). Adjust the door sweep at the back door or replace and close the corners. 10). Provide sufficient lighting n the restroom. One can light might work as long as the light is not too directional. 11). Please finish out the edges of the grease trap. Make sure the lid fits tightly. 12). Provide a reduced pressure principle backflow valve with hub drain upstream of the soda system. Please have valve tested before final inspection. 13). Based on configuration and food service sneeze guards may be required for the sushi station. 14). Counter top dining room beverage counter may not be laminate. 15). Provide coved base along the toe kicks of the dining room beverage counter if not leg mounted. No County legal action will result from this inspection. E-mailed to superintendent. e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
