PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Cooked noodles with an internal temperature of 53 degrees F cold holding in a pan on the top part of the prep table across from wok station. Cooked noodles were stacked above the fill line of the pan and when brought to PIC attention they removed excess noodles and placed them in the reach-in cooler to cool. Noodles were placed into the prep table at opening, approximately 10am. Ensure all cold holding TCS items are held at a temperature of 41 degrees F or below.

Priority Foundation-7-102.11, Pf: Common Name-Working Containers.... Two spray bottles without common name stored near the three compartment sink. PIC directed an associate to label the bottles. Ensure all chemical spray bottles are labeled with common names.

Core-4-202.16, C: Nonfood-Contact Surfaces.... Portioned cooked chicken in plastic bags stored in a cardboard box in the reach-in cooler next to the freezer. PIC removed the cardboard and placed portioned chicken in plastic container. Food is to be stored in containers that are durable and easily cleanable.

Core-6-501.14, C: Cleaning Ventilation Systems, Nuisance and Discharge Prohibition.... Ventilation hood has build up of grease and oil on the filters. PIC stated that the company who services/cleans the hood was due in December and they would call to schedule a service. Ensure the hood is cleaned by next routine inspection.
