Inspection Comments

Second walk through with the owners. The following items were discussed: 1). When the ice machine comes in please make sure to install a rigid drain, lead to the wall and then over to the floor sink, properly brace and maintain gravity flow and a 1 inch air gap at the floor sink. 2) Provide a hub drain for the backflow valve, see if you can install a 3/4 inch line and lead to the floor sink just like under 1. 3). Provide a rigid drain line for the ice shaver and lead to the floor sink, provide stand pipe into which you can place the hose. 4). Front counter will be finished out: a). Epoxy top b). Coved base along the toe kick. c). Panels installed and joints caulked, all raw wood finished out. 5). Sneeze guard will be installed on the counter, keep 60 inches for total height. 6). Corner trims and base will be finished out at the mop sink, all gaps caulked. 7). Sinks will be caulked to the wall at the top wall junctures. 8). Back door will be made self closing. 9). Ceiling grid and tiles will be completed. 10). Clean out in the floor near the RO system will be lowered. 11). Install cleanout covers at all cleanouts where missing. 12). Install trap seals or expandable plugs at all floor sinks that are abandoned. 13). Please finish out he edges of the of the floor sink in the back. No County legal action will result from this inspection. Printed on site. Inspection rights included. 4). Wilkins Reduced Pressure Zone valve was on site and will be installed upstream of the RP system. Valve will require a hub drain and testing and certification before final inspection. 5) Rubber or Vinyl coved base will be installed throughout. It is suggested to install 6" at this point so you have a good grip on the FRP and wall when mounting. Also install along the inside of the front counter counter. 6). Sealed butcher block counter is approved for the transaction counter. Epoxy finish sounds good. 7). Please provide an additional water feed with angle stop or faucet at the mop sink for possible future chemical dispensers. 8). New mop sink faucet will need to have an integral atmospheric vacuum breaker just like the old one had. 9). Finishes are being touches up, i.e. caulking of joints, FRP corners etc. Wall throughout will need to be cleanable. 10). Clean out covers will be installed where missing. 11). If you are not going to use the floor sink in the back room then install an expandable plug in the sink drain so the the sink is sealed. 12). Please note that all exposed wood in the front counter will need to be sealed. Not discussed was the dipper well or conserve well. No County legal action will result from this inspection. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
