Observed lidded containers of various cooked pasta in walk in at 60-65*F, employee stated pasta was made 2 hours prior. Had employee remove lids. Food items actively cooling should be left uncovered or loosely covered to allow for transfer of heat to ensure cooling takes place within cooling time frame.

Observed employee with nail polish on nails and no gloves working with pizza dough and putting various toppings on pizza prior to cooking. Had employee put on gloves. Gloves must be worn when working with exposed food if employee nails have nail polish, artificial nails, or otherwise non-bare nails to prevent contamination.

Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed food debris and general dirt build up in walk in and on floors throughout kitchen, especially around bottom perimeter of walls. Observed liquid splashes and general grime accumulation on outside of prep fridges, handwashing sink, and three compartment sink. Also observed grease and dust build up on ceiling tiles and air vents outside of pizza oven. Please clean and clean at a frequency to prevent buildup of dust, dirt, food debris, grease, and other organic matter. 2nd Consecutive Violation
