Core-2-401.11, C: Eating, Drinking, or Using Tobacco ------ Observed employees personal drinks and snacks stored on a shelf above containers intended for customer service. In the reach in freezer observed employee drinks over customer foods. Discussed storing personal items/foods in areas where they pose no risk of contaminating food or food contact surfaces. The manager had the personal items moved to a lower shelf at the time of inspection.

The manager stated the blades had been cleaned after being used the night before. Discussed maintaining food contact surfaces clean to the sight and touch. PIC had the can opener moved to the 3 comp sink to be washed, rinsed and sanitized.

PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding. ------ In the pizza warmer by the register, observed cooked cheese pizza holding between 97-105*F when measured with a probe thermometer. PIC stated the pizza is kept warm in the unit and had prepared the pizza one hour prior. Except during preparation, cooking, cooling, or when time is used as a control hot held TCS foods are to be maintained at 135*F or above. PIC found the hot air circulating fan to be in disrepair. PIC voluntarily discarded the out-of-temperature pizza at the time of inspection (see embargo) rather than reheating to 165*F. PIC stated the unit would not be used until it can be repaired.

Core-6-501.12, C: Cleaning, Frequency and Restrictions ------ Observed liquid splashes and general grime buildup at the cooling range and fryer splash guard. Also observed accumulation of grease on ceiling/around air vents over pizza oven and on top outside portion of oven unit. PIC stated they have been working to maintain other areas addressed in the previous routine inspection and would work to address the remaining areas this week. Clean areas and clean at a frequency to prevent buildup of food debris, dirt, dust, grease, and other organic matter.
