Second visit for the Marriot Hotel. Plumbing in the walls is complete except for at the bar. Dry wall is in place and walls are being finished out. Walked the food service area with the superintendent. The following items were discussed and some comments are left from the last inspection: 1). Food prep sink waste will be plumbed indirect to the floor sink under the three compartment sink. Drain in the wall will be capped. 2). Bar hand wash sink will have splash guards. 3). Ceiling in the kitchen will be washable grid tiles, soffit with washable/ wipable/ washable paint at breakfast bar. 4). Floors will be quarry tile with quarry tile bae including in the bar area. 5). If not omitted in the bar area. Reduced Pressure Zone will be required upstream of the soda system. Install with hub drain assembly and please have the valve tested and certified before final inspection. Please do not install copper downstream of the valve. 6). Dual check valves with strainers will need to be installed upstream of the beverage machines i.e brewer #105. See handout. If no filter or not installed after the filter dual check valve will need a debris strainer. 7) Lighting has now been drawn in for the kitchen. Looks like enough lights and well distributed where marked. Please make sure you also have enough light at the ice machine. 8). Toe kick of the breakfast bar will be based out with coved base. 9). Separate water line was not installed at the mop sink. If a chemical dispenser will be installed then provide a separate water feed. If needed come straight down through the grid and install a faucet. 10). Dish washer will need to transition into a rigid pipe, brace and clamp and lead to the floor sink. Maintain a 1 inch air gap. 11). Make sure to caulk the joint between the wall and the underside bar top on the bar side. 12). Any substrate of the bar top that is not finished at the bar will need to be painted out with a washable paint. 13). Drain lines at the bar will need to be installed as high as possible, led to the wall and then over to floor sink, forward and maintain air gap. Next visit is at the time sinks are being set in the kitchen. No County legal action will result from this inspection. Printed in site.
