PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Ware washing machine in bar area providing a maximum temperature of 140*F and a chlorine concentration of 0ppm. Observed that labelled sanitizer tubing was tucked in back not hooked up to any sanitizer. Person in charge hooked up chlorine sanitizer, machine was primed and run again and provided a chlorine concentration of 50ppm. Recommend re sanitizing all items that have been cleaned in this machine to ensure proper sanitizing.
