Observed various TCS items (see embargo list) at 44-55*F in tall reach in fridge unit BOH. Unit observed at 45*F. PIC stated all items were stocked in unit yesterday or beyond and voluntarily discarded. Also observed kegged cold brew at 54*F in keg fridge FOH. PIC stated cold brew is brewed at room temperature overnight and kegged before placing in fridge. Cold brew is considered a TCS food item and must be brewed under refrigeration unless a variance is obtained by the department. Cold brew must be kegged under 41*F. TCS items must be at or below 41*F to prevent growth of bacteria.

PIC discarded sprays. Chemical pest control measures must be administered by a licensed professional to prevent contamination. Chemical pest control may not be stored or used by establishment per Arizona law.

Observed tall reach in fridge BOH holding various TCS items at 45*F. PIC called for maintenance. A reinspection will be conducted on Friday, 7/22. Cold holding units holding TCS items must hold at or below 41*F, or otherwise in a capacity, to ensure TCS items are being held at or below 41*F.

Observed establishment using quat sanitizer to sanitize dishes at three compartment sink FOH. PIC could not provide quat test strips at time of inspection. Please obtain quat test strips prior to reinspection on Friday, 7/22. Test strips should be utilized to ensure proper concentration of sanitizer (150-400ppm for quat sanitizer and submerged for at least 30 seconds) is being used for proper sanitation.

A reinspection will be conducted on Friday, 7/22 to check for test strips and reach in fridge BOH. Of note: Discussed proper cold brew guidelines to PIC and provided Cold Brew guidesheet. Without a variance, cold brew must be brewed under 41*F and kegging may not be held over 48 hours. // Establishment had run out of paper towels and had napkins at handwashing sink, discussed use of cloth towels at handwashing sinks would need to be a new towel every time someone washes their hands. This establishment is not participating in the award program at this time and had 1 Priority, 3 Priority Foundation and 0 Core Violations on this inspection. No County legal action will result from this inspection. Report emailed to PIC.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
