For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Observed diced ham, chorizo, breakfast sausage, shredded cheese, spinach, diced tomatoes, and cooked peppers sitting in containers on a cart out at ambient temperature with temperatures between 50 to 53*F at time of inspection. Per cook, items were out less than an hour prior to inspection and items were moved to walk-in to rapid cool at time of inspection. Discussed proper cold holding with the PIC. All TCS foods held cold must be held at 41*F or below at all times. Repeat violation.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. - Observed chicken noodle soup, green chile pork, & cooked mushrooms stored in the walk-in with prepped dates of 2/18 & 2/19 at time of inspection. Chicken noodle soup, green chile pork, & the cooked mushrooms were embargoed at the time of inspection. Discussed date marking procedures with the PIC. All RTE/TCS foods must be date marked after 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Discussed the importance of discarding all RTE/TCS foods after 7 days. Provided PIC with guidance document for date marking at time of inspection. Repeat violation.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge was unable to produce a certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. A pattern of non-compliance for foodborne illness risk factor violation # [20 & 21], [3-501.16(A)(2) and (B) & 3-501.18] has been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Of Note: - On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
