Inspection Comments

First walk through for the new Arby's with the superintendent. The following items were discussed: 1). Mop sink will be caulked at the floor and wall junctures. Provide a flush bead of caulk at the top wall junctures or beveled away from the wall. 2). Install an additional water line at the mop sink for the future chemical dispensers. 3). All epoxy base joints will be caulked with the wall finishes junctures throughout. 4). Hood will be caulked with silver caulk at the back wall junctures. 5). After counter is set caulk the underside counter / wall junctures. 6). Restrooms will receive washable ceiling. 7). RP valve is installed upstream of the soda system. Valve will require testing and certification. 8). Cut in drain grate under the drain of the backflow valve so water can get away if valve leaks. 9). Install coved rubber or stainless base along the front of the walk -in unit. 10) Additional lights will be installed in the cooler, make sure to fill in and finish out all the walk-in wall penetrations. 11). Condensate of freezer will be routed to the floor drain. 12). Condensate from the walk-in cam go outside in a dry well or lead outside the cooler and install a sump pump. 13). The base tile in the restrooms will be beveled to the floor with a bead of epoxy grout. 14). A dual check valve that meets plumbing standard ASSE 1022 will be installed on the water supply to the coffee brewer. 15). Washable ceiling tiles will be installed over the soda station in the dining room. 16). Restroom doors and all exterior doors will be self closing. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
