PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition.>>>Observed shredded feta cheese and blocks of feta cheese with no date indicating when the container of feta cheese was opened. Employee indicated they did not know when the feta cheese was opened and that is was likely close to 7 days before the inspection; employee was informed that feta is not an exempt cheese from date marking and must be discarded or sold within 7 days. Employee voluntarily discarded of the feta cheese at time of inspection. Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking.>>>Observed the following ready to eat time/temperature controlled for safety foods with no date indicating when they were prepared, opened, or opened/thaw: chili sauce, falafel, rice pudding, hummus, and spanakopita. An employee indicated that all of these foods were received 03/24. Employee informed that all ready to eat time/temperature controlled for safety foods must be labelled with the date they were prepared, opened, or opened/thawed. All foods listed above were labelled. Person in charge was informed that ready to eat (RTE) time/temperature controlled for safety (TCS) foods must be discarded 6 days after opening, preparing, opening and thawing (or 7 days with day 1 being the day they were opened/prepared/opened and thawed); RTE TCS foods may have harmful bacteria that grow at refrigeration temperatures and after 7 days may cause foodborne illness. Foods intended to be held for more than 24 hrs. must be labelled with a day indicating when it was prepared, opened, opened and thawed or the day they must be sold, consumed or discarded; this ensures RTE TCS foods do not remain in the establishment for more than 7 days. PRIORITY VIOLATION-5-203.14, P: Backflow Prevention Device, When Required>>>Observed a hand held bidet attached to the water supply line for the establishment's toilet. The hand held bidet is a shut off style water sprayer attached to a hose that allows for the sprayer to rest on the floor or in the basin of the toilet. Person in charge informed that due to lack of air gap for sprayer and it being a shut off style sprayer they must install a high hazard back flow device such as a RPZ (ASSE 1013) or a spill proof back flow preventer (ASSE 1056). RE-INSPECTION 04/01/24.

Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one (1) Certified Food Protection Manager (CFPM) on staff. Correct by next routine inspection. Re-inspection will occur within 10 business days (April 1, 2024). This establishment is not participating in the award program at this time and had 2 Priority, 1 Priority Foundation violations on this inspection. *Of note: the establishment receives food from their sister restaurant owned by same owner. The sister restaurant must label all ready to eat time/temperature controlled for safety foods with the prepared, opened, or opened/thaw date prior to sending food to this restaurant Reviewed: vomit/fecal accident clean up procedure A copy of the inspection report was emailed. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
