Observed sandwich prep refrigerator measuring with ambient temperatures ranging between 45-48 degrees F (varies from top and bottom portion). TCS food items such as deli meats, cheeses, and condiments measured with internal temperatures ranging between 46-47 degrees F. These items were recommended for discard due to not having documentation to confirm last temperature check on this prep refrigerator. See embargo list for details. Refrigerator will not be used to hold TCS food items until in good repair and able to maintain internal food temperatures at or below 41 degrees F. Discussed cold holding and utilizing temperature check logs routinely. Adequate alternative refrigeration available to operate safely.
