Inspection Comments

New owner inspection walk through for the Bakery permit with the store director. The following items were identified for correction: 1). At the front service area raise the drain line if the ice machine off the floor and lead to the floor sink with an air gap. 2). At the front service area, raise the electric conduits off the floor under the steel work table. 3). Replace rusted out file cabinet and locate in area where it is not exposed to mop water. If needed install casters so it is off the floor and can be moved. 4). After the next cleaning re-caulk the donut hood at the back wall. Remove all old loose hanging caulk. 5). Change out the light in the donut hood and provide light shield so grease does not end up in the fixture. 6). Repair base wall along the bakery cooler where damaged. 7) One of the stainless steel hood trims is loose under the donut hood, please re-mount. 8). Close access panel at the three compartment sink and lock. 9). Provide a pressure vacuum breaker for the chemical dispenser and mount 12 inches off the floor. After installation the valve should be tested and certified. 10). The first drain on the three compartment sink is leaking, please repair. 11). Touch up the caulk on the three compartment sink where open. 12). Provide full air gaps in the back flow housing of the chemical dispensers at the three compartment sink. 13). Fill in any holes i the FRP in the wash area. 14). Provide a new drain grate for the floor drain in the center of the back room. 15). Install a double check valve on the water line to the proofer and the large walk-in oven. One may serve both. After installation the valve should be tested and certified. Install in a accessible location. This establishment has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the issuance of this permit and begin operation, the applicant must first submit payment of the permit fee to the Department’s Business Services Office. Per Chapter I, Regulation 4, of the Maricopa County Environmental Health Code, no person shall conduct an operation or an establishment for which a permit is required without holding the necessary and valid permit to do so. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
