OC inspection - E&D Class 4 This inspection was conducted with the owner A PDF copy of this inspection report was emailed to Mariusc K. at the time of this inspection. This facility is not currently in operation. Correct the following prior to final permit approval 1. The cold water valve on the hand sink in the dishwasher area is not functional. Repair the hot and cold water valves on this sink to be fully functional. 2. Finish installing the new three compartment prep sink and ensure that it is properly secured to the wall so that it does not move. Provide a faucet that is capable of reaching and filling all three compartments of the sink. Provide a drain pipe that empties into the floor sink with a minimum 1 in. air-gap. 3. Ensure that all refrigerated food equipment including the walk in cooler is running and able to maintain foods at 41° F or less. 4. Ensure that the dishwasher is sanitizing with 50-100 PPM chlorine. 5. The wall beneath the dishwasher is deteriorated with missing cove base excess foam and a missing cleanout cover beneath the three compartment sink. Repair the wall and FRP beneath the dishwasher so that it is properly attached, smooth and easily cleanable. Replace the missing cleanout cover and provide cove base at all floor/wall junctures. 6. Attach and seal the loose stainless steel sheets to the walls underneath both exhaust hoods. 7. Provide washable ceiling tiles above all food areas of the front deli area. 8. Replace the broken door seal on the glass door of the walk-in cooler. No county legal action will result from this inspection.
