PRIORITY VIOLATION-3-501.14, P: Cooling. Observed cut tofu in plastic-wrapped plastic containers approximately 3 inches deep and 6 inches wide in walk in cooler and in left prep fridge on cookline at 51-55*F. PIC stated items were sliced at about 6am, and put into walk in. Container in prep fridge had been in that unit since approximately 10:30am. Walk in was observed at 40*F and all other TCS items prepped that morning were in temperature. It was determined that hot water had been added to tofu after slicing maybe causing the higher starting temperatures. Items had been cooling for approximately 6 hours and PIC voluntarily discarded. TCS items prepped from cold holding or made with ingredients at ambient temperature must cool to below 41*F within 4 hours to prevent growth of bacteria. Recommend added ice water to sliced tofu and not immediately covering with plastic wrap to ensure item cools to below 41*F within 4 hours.

Priority Foundation-7-202.11, Pf: Restriction-Presence and Use Observed two cans of Raid insect spray under table next to mop sink BOH. PIC discarded cans. Chemical pest control measures may only be used and administered by a licensed pest control professional to prevent contamination.

Of note: Discussed with PIC keeping shut off spray nozzle detached from mop sink hose when not in active use as it is attached downstream from an AVB that is not designed to handle the pressure that the shut off valve introduces and contamination of the water supply could occur. This establishment is not participating in the award program at this time and had 1 Priority, 1 Priority Foundation and 0 Core Violations on this inspection. No County legal action will result from this inspection. Report emailed to PIC. Notice of Inspection Rights made available to PIC.
