Person in charge explained that they were using it to fill up their wells for hot holding. Person in charge was advised that the all hand washing facilities must be accessible at all times and shall not be used for any other purposes than hand washing. Person in charge removed stainless steel metal cylinder from sink at time of inspection.

Observed rotisserie chicken where meat was being taken off of the bone to be used for prepared meals. Two pairs of gloves, tinfoil with unknown prior in use along with other items that were going to be discarded came in contact with a half and whole bird. Birds were discarded at time of inspection. Person in charge was advised that items not used in the preparation process should not come in contact with ready to eat foods to prevent contamination.

Observed metal strainer above 3 compartment sink with two holes and protruding metal wires where the holes were. Person in charge was informed that food contact surfaces shall be easily cleanable. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
