Observed deli prep cooler with ranch, sour cream, red salsa, green salsa, pico de gallo, cheddar cheese, mozarella cheese, shredded lettuce with an internal temperature of 54-57*F. Person in charge stated all TCS foods were in cooler since AM ( more than 4 hours prior to inspection) and were discarded at time of inspection. All cold held TCS foods must be at or below 41*f at all times.
