In the back area of the meat market cold room, observed shelving with chicken drumsticks and chicken breasts stored above chopped beef and beef steaks. Raw animal foods should be stored according to their minimum cook temperatures. The lowest minimum temperature being stored on top and highest minimum temperature on bottom. It was determined that this was a violation due to lack of verification. Discussed storage and verification of storage with manager. Foods were moved to properly prevent cross contamination.

Observed minor build up of organic matter on the upper portion of the interior panel and on the roof of the ice making machine in the meat market cold room. Manager states that the ice is not for consumption and exclusively used for raw seafood storage. Instructed manager to increase the frequency and thoroughness of the cleaning of the unit.
