Observed raw chicken stored above raw beef in the walk-in cooler. Raw chicken should always be stored below any other raw meats or seafood to prevent cross contamination. PIC rearranged the foods. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff which resulted in the violation. Provided proper storage chart.

An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Report emailed to PIC. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
