Also observed no paper towels at hand wash sink located in the BOH next to food prep area. PIC provided paper towels at the time of inspection. A hand drying provision must always be available at all hand wash sinks to allow for proper hand washing.

Facility must be maintained in good repair and all floor/wall junctures require cove base. Cove base under type-1 hoods is required to be metal or equivalent.
