Observed Tuna salad (53°F) and cooked beans (56°F) covered in the walk in above 41°F. Items were uncovered, at time of inspection. Staff to ensure cooling Time Temperature Control for Safety (TCS) foods remain uncovered in shallow pans until they reach 41°F or below. Recommended staff use cooling logs to ensure temperatures are reached. Discussed cooling methods with management.
