Observed cheese pizza (110°F) at the pizza station. Establishment uses time control for all food items at the pizza station. The time log had not been filled out for today. Staff filled in the time log for the pizza station items, at time of inspection. The manager stated all pizza station items had been made and placed out at the station at 11 (2 hours prior). Discussed time control parameters with management. Establishment to use the time log, which has the time control policy, and keep it near were Time Temperature Control for Safety (TCS) foods are placed on time control.

Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed heavy grease built up on the fans and light fixtures at the outside grill. Establishment must be cleaned frequently enough to prevent the accumulation of dirt, organic matter, and food debris. Discussed the importance of keeping all surfaces free of grease to aid in pest control. Must clean prior to next routine inspection
