For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Sliced cheeses in prep top cooler found with internal temperatures of 50-52*F; verified with PIC's and inspector's probe thermometers. Both thermometers were calibrated during inspection. PIC stated the cheese were placed in the cooler at about 7:30 AM today and last checked for temperature at 9:00 AM. PIC discarded the cheeses. The cheeses were likely out of temperature due to being placed on false bottoms in the pans. Other TCS food items in the cooler such as sliced tomatoes and lettuce were found at 41*F or below. PIC will monitor the cooler to ensure all TCS product are maintained at 41*F or below and take necessary actions as required. Please ensure cold held TCS food items are maintained at 41*F or below.

A pattern of non-compliance is developing for Priority violation # 20, 301.16(A)(2) and (B), which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Discussed mop sink atmospheric vacuum breaker maintenance and keeping pressure off the line, best basin for sanitizer solution at 3 compartment sink, date marking, and facility maintenance.
