Observed food items at sandwich prep cooler next to toasters with temperatures greater than 41*F: Sliced Turkey and Beef at 52*F, Diced tomatoes at 51*F, Shredded Lettuce ay 50*F, Tuna and Chicken salads at 52*F, Gyro Meat at 56*F. As per the kitchen staff the refrigerator was stocked at end of the prior day Observed liquid eggs along the breakfast sandwich prep cooler across from grill at 48*F. As per staff, the liquid egg was prepared an hour prior to the inspection. Cold food items must be held at 41*F or lower. All items out of temperature were embargoed and discarded.

Observed sandwich prep table next to toasters with an ambient temperature of 58*F. Cold hold equipment must be at a temperature that can hold food items at 41*F or lower. Item in unit were discarded and repair company contacted. Reinspection will be conducted on or before 10 days (Friday, July 22, 2022).

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with . Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. 2-102.12.(A) Certified Food Protection Manager. During site visit no staff on site with a Certifies Food Protection Manager certificate. As of February 2022, all establishments must have a Certified Food Protection Manager on site during normal hours of operation. Core Violation, Correct Prior to Next Routine Inspection. Discussed the difference between service and companion animals, provided ADA handout to operator. Provided chart to assist with monitoring cols hold temperatures.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
