Person in charge (PIC) moved raw ground beef to bottom shelf of the prep table at time of inspection. Ensure all raw animal proteins are below RTE foods and organized raw animal proteins by cooking temperature at the time of the inspection. All raw animal proteins must be stored below RTE foods and stored according to cooking temperature at all times to prevent cross contamination. Discussed the importance of proper food storage to prevent cross contamination.

PRIORITY VIOLATION-5-202.11 (A), P: Approved System - Observed a hose with a sprayer nozzle connected to the mop sink faucet with an atmospheric vacuum breaker (AVB). Discussed with person in charge (PIC) removing the spray nozzle from the hose of the mop sink hose when not in active use as it is attached downstream from an AVB, which is not designed to handle the pressure that the shut off valve introduces and contamination of the water supply could occur. PIC removed sprayer nozzle at time of inspection.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. - Observed newly constructed bar with reach-in and handwashing sink as well as restroom in the banquet area of the establishment. Per person in charge (PIC), banquet area has not been used yet and construction for the bar and restroom have just been completed. Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days. Provided PIC with link for re-model. Of Note: - Discussed with person in charge (PIC) about the requirement to remove vacuum-packaged raw fish from package before thawing. - Discussed with PIC about - The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months.
