Inspection Comments

First inspection walk through and meeting with the owners. The following items were discussed: 1). Ice machine, and ice block maker will be installed in the front service area. Drain will be run along the wall to the floor sink in the RO room. 2). Ice machine and ice block maker will need to be locked so there is no public access. 3). Drains in the now storage room will need to be closed off with expandable plugs. 4). A Reduced Pressure Zone backflow valve will need to be installed upstream of the RO skid. Install between 12 inches and 5 feet from the floor in an accessible location. Install with hub drain and lead the drain to the floor sink. 5). All drains need to be rigid, properly braced, follow gravity flow and led to the floor sink creating a one inch air gap. Install so that areas around the lines are easily cleanable. From an ice shaver you can transition into rigid if you create a stand pipe from PVC for example and then place the hose in the stand pipe. The rest of the drain is then rigid. 6). CMU wall in the mop room will need to be block filled and painted out. 7). Mop room ceiling will receive a washable ceiling. 8). Ceilings over the water equipment tables and now ice machine in the front will need to be washable. The now store room may be regular acoustic again as you no longer will be installing water fed equipment here. Page A1 ceiling plans. 9). Storage room CMU wall will need to be block filled and painted to the ceiling with a washable paint or fur out. 10) The FRP on the walls in the ice room may be omitted now that this has become a dry storage room. FRP can not be installed on the wall at the new location. In essence all the finishes from the ice room move to the new location. 11). Restroom door will have a self closer. 12). A separate water feed will be installed on the cold water line under the water heater platform. 13). Please make sure to finish out the water heater platform and caulk joints before placing the 50 gallon water heater. Drain pan lines and T&P can be run through the platform or in the wall. 14). Water table chosen has a stainless finish and not laminate. 15). No sneeze guard will be required for the work station behind the counter with ice shaver is located under the condition that the ice cream dipping cabinet stays in place. 16). Water machine will be mounted closer the mop room, as long as there is access to the mop room to roll a mop bucket through you will be ok with us. Make sure to check with the city. Also if you ever have to change the water heater it will need to fit through. 17). Drain of the water dispenser will need to be run to the floor sink at the three compartment sink. 18). Not sure what you will do for the ice scoop. Conserve wells are hot water wells in which scoops can be placed or you can install a running water dipper well. 19). Front counter is stainless steel. 20). Rubber base is installed throughout including in the mop room. Please call for your second inspection when fishes are done and you are installing plumbing fixtures. No County legal action will result form this inspection. E-mailed to owner. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
