Equipment inspection for a Class 4 10+ E&D permit was conducted with superintendent Ryan T. by appointment. The establishment is approximately 75% complete. Please ensure the following items are addressed by the completion of the project: 1) Provide separate ASSE 1013 reduced pressure backflow preventers upstream of the Combi-ovens and steamer units. Certify and provide test reports. 2) Provide an ASSE 1020 pressure vacuum breaker upstream of the hose reel located in the cart room. Cerify and provide a test report. 3) Provide ASSE 1022 dual check backflow preventers on the water supply lines connected to non-carbonated beverage equipment. 4) Provide micro-switched air curtains to the large sliding doors at the dining area. Ensure all manual switches and knobs have been disabled on the air curtain units. 5) Provide a smooth, washable ceiling in the cart room area. 6) Provide a 3/8th inch minimum cove base to the exterior of the walk-in cool and at the ventilation hood wall areas. 7) The multiple overhead lines at the front service cooking area must be covered to provide a smooth and easily cleanable finish. Recommend installing a pan system under the overhead lines. 8) Ensure cove base is provided to the millwork/floor junctures. At the final construction inspection, ensure hot water measuring 120' F minimum is provided to the plumbing system and all refrigerators are on and measuring at 41' F or below. MCESD inspection report was delivered via email. No County legal action will result from this inspection.
