E&D, class 4 10+ Equipment inspection was conducted with the superintendent, Ryan T. and owner’s representative, Sam G. Construction had been completed. Permit is not approved. The establishment can stock and train. Please address the following items prior to the final construction inspection: 1. Provide air curtains over the folding doors or around open food service area. Discussed Barrier Exemption with Sam. IPM (integrate pest management) and AMC (active managerial control) procedure must be approved by the Department or air curtains prior to the folding doors can be open. Screw the doors shut unless approved by the Department. 2. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) at the water connection point of each combi oven. Provide a drain cup for the vent of the RPZ. Drainpipe must be rigid and indirectly discharge to the floor sink with minimum 1” air gap from the finished floor. 3. Provide a double check (DC) assembly (ASSE 1015) at the water connection point(s) of each steamer. 4. Certify all testable backflow devices and provide report. Ensure all testable backflow devices must be installed at least 12” but not more than 60” above grade, visible and accessible for monitoring and maintenance purpose. 5. Provide monitoring logs for non-testable backflow devices on coffee machines, soda machine and ice makers. Non testable backflow preventers must be replaced when/ if they are leaking. 6. Provide rigid drainpipes for the overflow lines of the water filters. PVC or ABS are acceptable. Brace the drainpipe on the wall with metal brackets, slope to drain and ensure proper air gap to the nearest floor sink. 7. Create a larger access cut out in the cabinet to the floor sink under the coffee machine. Please paint around the cut out with semi-gloss paint. 8. Curb around the raised floor sinks and drain troughs throughout the kitchen or reset them to be flush at the same level as the floor. All of the floor sinks and troughs are ¼” to ¾” above grade. This creates tripping hazards in the kitchen. 9. Caulk and seal on trims of the FRP panels in wet areas: ware washing room, can wash, mop sink, and prep sinks. 10. Provide missing plugs inside the walk-in units. 11. Seal around fire sprinklers’ penetrations inside the walk-in unit. Please use low temp silicone. Emailed the report to the superintendent. No County legal action will result from this inspection.
