Inspection Comments

Plumbing Inspection. Walked with owners. Project nearly complete. Correct the following items for permit approval: 1) Re-plumb 3-compartment sink so that it has a minimum 1” air gap indirect connection to the sewer, such as through a hub drain. 2) Re-plumb water fill station so that it has a minimum 1” air gap indirect connection to the sewer, such as through a hub drain. 3) Install an RPZ (ASSE 1013) backflow preventer on water line to RO system. Have backflow tested after inspection. Backflow must be tested yearly. 4) Install an ASSE 1022 backflow preventer on water lines to coffee/tea brewers including espresso machine, and to ice machine. 5) Have chemical company replace internal backflow prevention with true 1” internal air gaps; the kind currently installed is not an unobstructed air gap (screen). 6) Either install a hand sink in restroom with mop sink, or remove toilet (if a second restroom is required by the Town, a hand sink must be installed). Mop sink cannot serve the dual purpose of a hand sink. Mop sink may be relocated if necessary (it may not be removed entirely); if so, it must have hot and cold water and drain to the sewer, and have an FRP backsplash or similar. 7) Repair slow drain at front service hand sink. 8) Paint or seal all raw wood under counter in front service area. 9) Fill all gaps in wood under counter in front service area with caulk/silicone. 10) Seal front service hand sink to wall with caulk or silicone. 11) Repaint ceilings in restrooms a light color. 12) Install cove base where missing in front service area and restrooms; a cove may be tooled in at cabinetry base and in restrooms; use rubber cove base otherwise. 13) If blender or toaster are place on front service counter, a sneeze guard is required, and the counter must be solid surface (wrapping counter in stainless is acceptable). No County legal action will result from this inspection. Report emailed and inspection rights provided to Don Little.

e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
