Per employee, meats were placed in hot holding unit <2 hours and ready for service. Temperature of hot holding unit was increased for proper hot holding temperature. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times.

Per employee, TCS foods were placed in cold holding unit <2 hours. Employee moved coleslaw and potato salad to walk in cooler to rapidly cool back down to the proper cold holding temperature. Cold holding unit was moved away from hot holding line to maintain proper temperatures. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. Provided Maricopa County handouts for food borne diseases/symptoms and cleaning d/v accidents. Core-2-102.12(A), C: Certified Food Protection Manager ............No certified food protection manager at establishment. Per owner, working on obtaining food manager certification. (A) The PERSON IN CHARGE shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Reviewed with employees: handwashing, bare hand contact, storage of raw vs ready to eat foods to prevent cross contamination. Per Plan Review Construction inspection: 1) For future jockey box, it must drain indirectly to the sewer; provide a hub drain with a minimum 1??air gap (walk-up beverage service area). 2) Finish out small closet with electrical panel ??in process at time of inspection. 3) Provide a cover or similar for on/off switch at fly fan at service window, so that fan may not be turned off (a micro switch has been properly installed). For outdoor bar and outdoor cooking areas: 4) Smooth out all rough areas of concrete in outdoor area. 5) Seal concrete in outdoor cooking area, so that concrete does not absorb fluids and is easy to clean. 6) Seal all wood and metal in outdoor bar area, including floor. Patch any major holes in floor first. PIC states items 1-3 should be corrected by 4/27 when soda company is scheduled, and items 4-6 should be corrected by 5/27 when flooring company is scheduled. PIC also states they have tried several different sealants for the concrete themselves and all have peeled up, so they have had to contract a company to acid wash and treat/seal the concrete outside. For future coffee bar, a minor remodel permit will be required. For catering off-site that includes stay and serve or cooking off proteins at event, a catering permit is required. A mobile food permit is required for smoking trailer (to be taken to events or set up in parking lots per PIC). Person in charge consented to inspection and reviewed inspections rights with person in charge: Denise G. Routine inspection report was emailed to person in charge at establishment. Inspection report confirmed received. No County legal action will result from this inspection.
