Inspection Comments

E&D, class 3 10+ Equipment inspection was conducted with the superintendent, Cesar. Some equipment had been installed. Walk-in units had not been installed. The person in charge must be a certified food protection manager and available on site at all operational hours. Please obtain and maintain all food managers and handlers’ certifications on site for inspection purpose. Please address the following items prior to the final construction inspection: 1. Provide 1” air gap from the finished floor or flood rim for drainpipes from the roof, water heater’s drain pan, 3-comp sink, prep sinks, ice machine, walk-in units, etc. 2. Provide dipper well for the ice cream cases. Recommend using the water saving hot water well. 3. Elevate the drainpipe of the prep sink at the front service area to 6” above the floor. 4. Provide self-closer for the restrooms’, front and back entry doors. 5. Provide slim-foot base tiles or tool siliconized grout at wall and floor junctures in the restrooms to provide the required 3/8” radius. 6. Provide 3/8” radius metal cove base outside of the walk-in units. 7. Flash-off sides and top of the walk-in units to the ceiling tiles and adjacent walls. 8. Provide additional floor tiles between the floor and cove tiles near the west wall of the kitchen. 9. Provide dedicated areas for employee’s food/drink and lockers for personal items. Emailed the report to the owner and superintendent. No County legal action will result from this inspection. Please contact the Department at 602-506-6824 to schedule the next inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
