E&D, class 4 10+ Construction inspection was conducted with the superintendent, Cesar. Construction had been completed. The walk-in cooler and walk-in freezer were not installed due to supply chain issue. A minor remodel permit will be created to address the installation of the walk-in units in the future. Permit is not approved. Please address the following items in order to be approved: 1. Provide hot water inside the facility. Hot water must be at 110*F or higher. Hot water is measuring at 104-105*F at point of service within 45 seconds upon activation. 2. Provide an additional water stub out for chemical dispenser at the mop sink. Per contractor, the establishment will not use chemical dispenser. 3. Elevate the end of the drainpipes from the roof and the drain pan from the water heater to 1” above the flood rim of the mop sink. 4. Extend the end of drainpipes from 3-comp sink, prep/ work sinks 2 or 3 more inches closer to the floor sink so the force from the water discharge is not splashing around the facility. Ensure minimum 1” air gap is obtained from the end of the drainpipe to the flood rim of the floor sink. 5. Provide self-closer or self-closing hinges on all exterior doors. 6. Connect the ice cream machine. Route the drainpipe to the nearest floor sink with 1” air gap from the finished floor. Ensure drainpipe is rigid. 7. Fill the gap at door frame and floor junctures. 8. Provide threshold at the backdoor to smooth out the transition between the different floor level. 9. Provide door sweep on the backdoor. Emailed the report to the owner. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
