Plumbing Inspection - E&D Class 3 This inspection was conducted with the on site superintendent. A PDF copy of this inspection report was emailed to Troy F. at the time of this inspection. Address the following prior to final permit approval; 1. Provide a certified, RPZ (009) backflow prevention device for the water line that will be used to feed the blender rinser at the small prep sink near the hood. 2. Provide a hard pipe drain line such as PVC to the nearby floor sink with a minimum 1 in. air-gap for the mechanical dishwasher. 3. Provide a certified RPZ (009) backflow prevention device on the water supply line that feeds the RO system which then feeds the Comvotherm ovens. All piping and fittings on the downstream side of this RPZ (009) device must be plastic or stainless steel including the hose bibs behind the ovens which are currently brass. The convotherm ovens which are connected to chemicals must be isolated from all other fixtures and equipment connected to water supply lines. 4. Provide a certified RPZ device for the non-RO water line that also feeds the Comvotherm ovens. 5. Provide an additional stainless steel certified, RPZ (009) backflow prevention device to protect the Steamer/Hot holding device that is located in the center island in the front kitchen area. This additional device must be installed downstream from the RO system, on the line feeding the ovens and after the T-connection to the steamer, so that the Convotherm ovens remain isolated from the steamer. 6. Provide a cove base finish at the floor/wall junctures throughout the establishment, including the back room where the RO system and water distribution manifolds are located. 7. Provide a certified, RPZ backflow prevention device for the water supply line that feeds the pressure washer system. 8. Provide sneeze protection with side panels if necessary for all food preparation and open food areas that will be exposed to customers. No county legal action will result from this inspection.
