Equipment Inspection - E&D This inspection was conducted with the on site superintendent. A PDF copy of this inspection report was emailed to Troy F. at the time of this inspection. Address the following prior to final permit approval; 1. All piping and fittings on the downstream side of the RPZ (009) backflow prevention device for the RO system must be plastic or stainless steel. There are currently two brass fittings on the downstream side of the RO system in the water heater room that must be removed. 2. Remove the brass double check valve assembly on the RO line behind the steamer machine. 3. The Convotherm ovens which are connected to chemicals must be isolated from all other fixtures and equipment connected to water supply lines. Provide an additional stainless steel certified, RPZ (009) backflow prevention device to isolate the Convotherm ovens from the steamer machine that is also connected to the RO system. This device must be installed downstream from the T-connection that splits the RO line to the Convotherm ovens. This device should be installed on the RO line behind the Convotherm ovens as discussed. 4. Ensure that all sinks have hot and cold running water. No county legal action will result from this inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
