Inspection Comments

Permit update: Stopped by to check on the status of construction. There are tiles workers in the facility. Superintendent is not on site at the time of inspection. Left business card at the front counter. Noted walk-in units had been installed. There were insulated food bags with vacuum packed meats and other ingredients stored on the floor inside the walk-in freezer. Please address the following items prior to the next inspection: 1. Provide air curtains at walk-in cooler’s doors and food production room. 2. Provide indirect drain to a floor sink with minimum 1” air gap from the finished floor for food prep sink, ware washing sink, drip trays, condensation drainpipe. 3. Provide 3/8” radius metal cove base at walk-in cooler outside wall panels and floor junctures or cabinet base and floor junctures throughout the facility. 3/8” radius cove base must be in food production, food storage, dry storage and restrooms. 4. Painted wall/ ceiling in food prep, food storage, and restrooms must be semi-gloss or high-gloss paint. Any other paint finish is not acceptable. 5. All equipment with direct water connection must have a backflow preventer at the water connection point of the equipment. Please refer to the backflow preventer handout. Priority violation is a major violation that directly contributes to increasing the risk of foodborne illness or injury.
e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
