Core-3-304.14, C: Wiping Cloths, Use Limitation - Observed sanitizer bucket at less than 50 ppm chlorine near the register. Person in charge (PIC) remade the sanitizer bucket, which retested at 100 ppm at time of inspection. Chlorine sanitizer must test between 50 to 100 ppm. Discussed the importance of proper sanitizer levels with the PIC.

Establishment uses chlorine for their sanitizing solution. Discussed importance of having chlorine test strips to determine concentration of sanitizer levels. This establishment received a B Grade and had 0 Priority, 1 Priority Foundation and 2 Core violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge was unable to produce a certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. OF NOTE: - Discussed with person in charge (PIC) about date marking. - Discussed with PIC about proper hose set up at the mop sink with a sprayer. Re-inspection scheduled for 10/14/2022. Report e-mailed. No County legal action will result from this inspection.
