In refrigerated make table across from fryers, observed a small sheet pan of raw lemon chicken stored above an open container of cooked egg foo young. Raw animal foods shall be separated during storage, preparation, holding, and display from raw RTE (ready to eat) foods and cooked RTE foods. Discussed importance of proper food storage to prevent cross contamination with PIC. Person in Charge (PIC) moved raw beef and raw chicken for proper storage. Materials that are used in the construction of utensils and food-contact surfaces of equipment shall be durable, corrosion-resistant, and nonabsorbent; sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. Discussed proper food storage equipment with Person in Charge (PIC). PIC moved chicken to plastic containers.
