In walk-in refrigerator, observed two containers of raw shrimp and a bag of raw calamari stored on shelving above an open container of chopped garlic and a container of cooked beef. Raw animal foods shall be separated during storage, preparation, holding, and display from raw RTE (ready to eat) foods and cooked RTE foods. Discussed importance proper food storage to prevent cross contamination with Person in Charge (PIC). PIC moved raw pork, raw shrimp and raw calamari for proper storage. Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking. >>> In walk-in refrigerator, observed containers of cooked pork, battered & cooked chicken and a sheet tray of cooked egg foo young without date marking. Per Person in Charge (PIC), pork, chicken and egg foo young were cooked more than 24 hours prior and held in walk-in refrigerator. TCS (time/temperature controlled for safety) food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. Discussed importance of proper date marking with PIC. PIC had TCS foods date marked at time of inspection. Per Person in Charge (PIC), bottles contained bleach, all-purpose cleaner and window cleaner. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Discussed importance of properly labeling chemical containers with PIC. PIC labeled spray bottles at time of inspection.

In dry storage area, observed two boxes of cabbage stored directly on floor. Foods shall be stored protected from contamination in clean, dry location 6 inches above floor. Person in Charge moved beef, chicken and cabbage for proper storage.
