In walk-in refrigerator, observed two containers of raw shrimp and a bag of raw calamari stored on shelving above an open container of chopped garlic and a container of cooked beef. Raw animal foods shall be separated during storage, preparation, holding, and display from raw RTE (ready to eat) foods and cooked RTE foods. Discussed importance proper food storage to prevent cross contamination with Person in Charge (PIC). PIC moved raw pork, raw shrimp and raw calamari for proper storage. Per Person in Charge (PIC), pork, chicken and egg foo young were cooked more than 24 hours prior and held in walk-in refrigerator. TCS (time/temperature controlled for safety) food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. Discussed importance of proper date marking with PIC. PIC had TCS foods date marked at time of inspection. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. This establishment is not participating in the award program at this time and had 2 Priority, 2 Priority Foundation violations on this inspection. A pattern of non-compliance is developing for Priority violation # [13], [3-302.11 (A1-2)] and # [37], [3-303.11], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
