Observed pastries containing sausage and cheese in donut case with internal temperature measured to be 73-74*F. Per person in charge they use four hour time as a public health control and every day put pastries out (135*F or above) at 9:00AM and discard at 1:00PM, but they do not have a written policy or timer set up yet. Provided sample time as a public health control policy and assisted operator in filling out. Documentation is required to ensure policy is adhered to, maintain at all times.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage. In use utensils (spoons, stirrers) in containers of 74-79*F water. Advised person in charge that in use utensils must be stored clean and dry, or in water 135*F or above. Utensils were removed to be cleaned and operator will store correctly.
