Inspection Comments

First inspection walk through with the superintendent. Plumbing is about complete. The following items were discussed, planned or observed: 1). A separate water line is installed at the mop sink in room 127. If there is a chemical pump that dispenses chemicals connected to the water supply and there is no internal air gap then install a reduced pressure zone backflow valve upstream. 2). The water connection at the steamer (#27) will receive a reduced pressure zone valve. Install valves with hub drain assembly and lead to the floor sink or mop sink. Valve will require testing and certification before final inspection. 3). Separate water feeds will be installed at the other two mop sinks, with angle stop or faucet. 4). The Reduced Pressure Zone backflow valve for the soda system may be omitted by special request from the design team. 5). Dual check valves will be required for the non-carbonated beverage machines #69 and # 70. 6). Ice machine in dock area will not be used for consumable ice and finishes may remain as specified. 7). What finishes is concerned please make sure that a coved floor ' wall juncture is achieved in the restrooms, coolers etc. See stipulation letter for requirements. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
