Inspection Comments

Second equipment phase inspection for the Eating and Drinking Permit. Walk trough with the superintendent and Banner Health. The following items were discussed: 1). Floor penetration for the chefs island will be grouted in and stainless cover installed. 2). Cancelled. The steamer is hand filled. (The water connection at the steamer (#27) will receive a reduced pressure zone valve.) Install valves with hub drain assembly and lead to the floor sink or mop sink. Valve will require testing and certification before final inspection. 3). Dual check valves will be required for the non-carbonated beverage machines #69 and # 70. One may serve both if you branch off. 4). Superintendent will check on the walk-in penetrations and make sure that they are filled in. 5). The condensate line from the walk-in is fine but needs an elbow downwards, if the P-trap is not required please remove. 6). Restrooms near the kitchen will have a coved floor / wall juncture. 7). Mop sink will be caulked at the floor and wall junctures. Provide a flush or beveled away from the wall bead of caulk. 8). Please plumb the drainage from the soda system through rigid pipes, maintain gravity flow and a 1 inch air gap at the floor sink. 9). Install a backflow valve upstream of the chemical dispensers (Reduced Pressure Zone or Pressure Vacuum Breaker) or make sure the chemical dispensers have an internal air gap. 10). Cleanout covers will be installed throughout, make sure to keep access to the clean outs under the beverage counter. 11). Plate drop shelve opening will be finished out. Stainless joints sealed and joints caulked. Gaps between stainless and wall will be caulked and filed. 12). Dish wash gutter will be mounted to the wall and caulked at the top wall juncture. 13). Plumbing escutcheon plates will be installed where missing. Throughout. Inspection with supervisor. Food bank has a hand wash sink in between the coolers. No open foods are handled this area. No County legal action will result from this inspection. Printed on site for superintendent.
