Inspection Comments

Equipment phase inspection for the Food Bank Permit. Walk trough with the superintendent. The following items were discussed: 1). Hood will be flashed to the side wall as well as the cooler to the wall under the hood. 2). Floor penetration for the chefs island will be grouted in. 3). The water connection at the steamer (#27) will receive a reduced pressure zone valve. Install valves with hub drain assembly and lead to the floor sink or mop sink. Valve will require testing and certification before final inspection. 4). Dual check valves will be required for the non-carbonated beverage machines #69 and # 70. 5). Superintendent will check on the freezer sprinkler penetration and make sure that they are filled in. 6). The overhead condensate line from the walk-in is fine. If possible insulate the line and caulk in at the exterior penetration. 7). FRP will be installed throughout the kitchen. At the Class II hood caulk the joints of they stand open. 8). Restrooms near the kitchen will have a coved floor / wall juncture. 9). Mop sink will have 4 feet of FRP and coved base. Floor is polished. Mop sink will be caulked at the floor and wall junctures. Provide a flush or beveled away from the wall bead of caulk. 10). Please plumb the drainage from the soda system through rigid pipes, maintain gravity flow and a 1 inch air gap at the floor sink. 11). Noted two dedicated water lines at the mop sinks. Not sure if there is one at the kitchen mop sink. If the operator plans to install a chemical dispenser in that room then install a separate water feed at that sink. It can be brought over from the hot water heater. Food bank has a hand wash sink in between the coolers. No equipment in planned in that area other than a work table. If you are planning on handling open foods in that area you will be required to install a washable ceiling in the area where open foods are handled. If no open foods are handled it may remain open to structure as is. No County legal action will result from this inspection. Printed on site for superintendent.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
