E&D, class 4 10+ Equipment inspection was conducted with the managers, Derek, Dominic and superintendent, James H. Construction is at 95% completion. All equipment had been installed. The establishment can stock cold and dry goods. Please address the following items prior to the final construction inspection: 1) Provide micro-switch activated air curtains at folding doors and delivery door. Manual switches at the air curtains are not acceptable. 2) Provide a reduced pressure zone assembly (RPZ) (ASSE standard 1013) at the water connection point of the mister system. Provide a drain cup for the vent port of the backflow device. Drain cup must route to the nearest floor sink with minimum 1” air gap from the finished floor. 3) Certify all testable backflow preventers and provide report. 4) Provide a vented dual check valve backflow preventer (ASSE standard 1022) at the water connection point of the cold tea brewer. 5) Provide light color ceiling inside the restrooms. Black color ceiling is not acceptable. 6) Please use semi-gloss or high-gloss paint in kitchen, self-service drink area, and restrooms. Flat, sheen, satin, matte finishes are not acceptable. 7) Provide semi-gloss paint on walls and ceiling above the self-service drink station. In lieu of soffit, drop ceiling, or cloud above this area, provide cleaning / maintenance procedure and logs for this area. Procedure should address who, what, when, where and how. Logs must have date, time, name of the person doing the task and name of the person checking the work. 8) Provide rigid drainpipes for cleaning drains from the pizza make tables. Brace drainpipes along the wall, slope to drain to the nearest floor sink. Owner will cap off the drain holes inside the drop-in cold storage of the pizza make tables. 9) Provide corner guards / trim at corners. 10) Provide 3/8” radius cove base at cabinet base and floor junctures. Please seal the bottom of the base to the floor. 11) Provide escutcheon plates around pipe penetrations. Please seal around the pipes first. 12) Provide missing grout around floor sinks, top and corners of bullnose tiles. 13) Remove all protective plastic sheets on stainless steel panels and equipment. 14) Provide door sweeps and weather stripping at all exterior doors. 15) Caulk and seal all gaps, cracks and penetrations that has the thickness of the business card throughout. This includes electrical, lights, and thermometer conduits and sprinklers inside walk-in units, trims, corner guards, panels, etc. No County legal action will result from this inspection. The inspection rights sheet is emailed with the report to the owner.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
