Inspector witnessed young female staff pushed hair to the side of her face then imediately put on new gloves without practice hand washing. Inspector addressed mandatory hand washing practice code with manager and staff at time of inspection. Staff was instructed by manager to wash hands upon inspection.

Chicken Wings on roller racks probed with an internal temperature of 58 degree F. Per staff, chicken moved out of the walk in cooler waiting to be portioned. TCS food is very risky to be left out at room temperature to rise above required temperature. Coached manager and staff to keep wings in walk in cooler until they are ready to work on. Wings had moved back to walk in cooler upon inspection.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. Discussed time use as control for TCS items may be needed during lunch rush. Pizza has time control and met requirement. Discussed during this inspection the location of the flat grill at the front. Discussed avoiding over fill of TCS items at the top cold holding unit. No County legal action will result from this inspection. Inspection report sent to Manager's email.
