E&D, class 3 10+ OC inspection was conducted with the manager, Tu H. The establishment is not open and operating and is remodeling RM-09544. Please address the following items prior to the next inspection: 1. Provide a list of equipment and their cut sheets. 2. Provide ASSE 1013, reduced pressure zone assembly, at the water connection point for the glass rinser, blender rinser, RO system if one will be installed. Provide drain cup for each RPZ. Drainpipe must be rigid and indirectly discharge to a floor sink with 1” air gap from the finished floor. 3. Certify all testable backflow preventer and provide reports. 4. Provide ASSE 1022, vented dual check valve backflow preventer, at the water connection point of each coffee/ tea brewer or any non-carbonated/ RO water machine. 5. Provide a food prep sink for the washing/ rinsing of fruits and vegetables. Sink must have hot and cold water and side drain board. 6. Provide sneeze guards and side protections along the front drink service counter. Vertical sneeze guard must be at least 60” from the finished grade. 7. Provide hot and cold water at all sinks. Hot water must be at 110*F or higher and available at point of service within 45 seconds upon activation. 8. Grind the floor at corners to the same level as the rest of the floor. 9. Boxed around floor sink under the cabinet to prevent trash from falling inside the cabinet. 10. Provide strainers for all floor sink. 11. Provide cleanout cover where missing. 12. Provide escutcheon plates around pipe penetrations. 13. Ensure light bulbs inside permitted area must be shatterproof or sleeved with plastic tube. 14. Provide adequate lighting for the drink service area. Lighting must be at 50-foot candle. 15. Caulk and seal all gaps that can fit a business card. This includes trims on FRP panels and die wall and countertop’s substrate. 16. Provide door sweeps and weather stripping at all exterior doors. The inspection rights sheet is emailed with the report to the person in charge. No County legal action will result from this inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
