Per PIC, the items had been in the reach-in cooler for about 2 hours, and were moved to the walk-in cooler for rapid cooling upon request. Please ensure all TCS food cold holds at 41*F or below.

PIC moved the TCS food to the walk-in cooler upon request. The two prep coolers had not yet been repaired and were holding at 56*F and 58*F, but no TCS food was stored in the coolers at time of inspection. Please repair coolers so they hold at 41*F or below prior to re-inspection on 6/29.

Upon re-inspection, all violations have NOT been corrected. No County legal action will result from this inspection. Made notice of inspection rights available to Shushma Thodima - report emailed A pattern of non-compliance is developing for Priority violation #20, 3-501.16(A)(2) and (B), which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. A re-inspection for the coolers will be conducted on 6/29/22. Please do not store any TCS food in the coolers until they are holding at 41*F or below.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
