Per PIC, the chicken had been cooked about an hour prior. PIC reheated the chicken to 165*F upon request. Please ensure all TCS food hot holds at 135*F or above.

Per PIC, the chicken had been cooked about an hour prior. PIC moved the chicken to the walk-in cooler upon request. Please ensure all TCS food uses appropriate cooling methods and such as cooled in a shallow pan in a rapid cooler.
