Discussed proper hand washing with PIC. Hands must be washed after handling dirty dishes before handling cleaned and sanitized dishes. Dishwasher washed hands for 20 seconds at the time of inspection before continuing to put away clean dishes.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding.-- Observed rice sitting out a room temperature on a cart near the side entrance to the kitchen with an internal temperature range of 75F-130F. Per PIC, the rice was cooked one hour prior to inspection and re-heated items above 165F. Per PIC, the rice is made one time at lunch then decarded and made again in the evening when the establishment is open again. . All food held hot must be maintained at 135F or above at all times. Discussed creating a policy for time as a control for the cooked rice.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. A pattern of non-compliance is developing for Priority violation # [19], [3-501.16(A)(1),], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. *Core-2-102.12(A), C: Certified Food Protection Manager--- No certified food manager available onsite at time of inspection. Obtain a certified food protection managers certification prior to the next routine inspection. Emailed owner the link to obtain a certified food managers certification. **(3rd REPEAT VIOLATION)** **Discussed date marking requirements, and creating a time as a control policy for the rice. No County legal action will result from this inspection. Report emailed at time of inspection.
